#06 Kimchi pancake

Kimchi pancake is the simplest dish you can make with kimchi. We assume you are already ready for making the pancake batter as all you need is kimchi, flour, water and salt. This means you can have kimchi pancake anytime as long as you stock kimchi in your fridge!


Ingredients

  • 2 tbsp vegetable oil

Batter

  • 250g of bite-sized kimchi

  • 1/2 cup of flour

  • 1/2 cup of ice-cold water (for extra crispiness)

  • Good pinch of sea salt

  • 60g of your favourite seafood such as shrimp, squid or canned tuna (optional)

  • 1 tbsp chilli flake (optional for better colour)


Method

  1. Add all the batter ingredients in a large bowl

  2. Mix until just combined and the consistency of thick batter

  3. Heat 2 tablespoons of oil in a large non-stick pan over a high heat

  4. Pour in the batter using a ladle and spread it thinly

  5. Fry until golden and crispy (for about 3 minutes), flip over and fry for another 2-3 minutes

  6. Make a dipping sauce by mixing soy sauce, vinegar and sesame oil or seeds

  7. Serve it right out of the pan and enjoy
