#07 Kimcheese


Kimchi Grilled Cheese Sandwich


When spicy tangy kimchi meets rich creamy cheese, it becomes kimchi grilled cheese! There are many recipes to try to combine kimchi with cheese such as kimchi mozzarella pancake, kimchi stew with cheddar, kimchi cheese fried rice or etc but we believe grilled cheese with kimchi is so far the best combination.

* For the best result, please use the kimchi older than 2 weeks.


  • 50-100g of finely chopped kimchi (drained)

  • 2 slices of any thinly sliced bread

  • 25g unsalted butter (cut into 4 pieces)

  • 1-2 slices of monterey jack cheese

  • 1-2 slices of mild cheddar cheese

  • 1/2 cup of shredded cheddar cheese (optional)


  1. Melt the butter in a thick non-stick pan over medium heat, place all slices of bread in the pan once the butter start to foam and cook until pale golden brown on bottom side

  2. Move the bread slices to a cutting board toasted-side-up, layer a slice of cheddar, kimchi and a slice of monterey jack on the one bread and sandwich with the other bread (both toasted sides facing inwards)

  3. Melt the butter and reduce the heat to medium low. Add sandwich and cook, swirling occasionally, until golden brown, about 5 minutes and remove the sandwich using a spatula

  4. Melt the remaining butter, place the sandwich in the pan cooked-side up and cook, swirling occasionally, until the bottom gets golden brown and cheese is thoroughly melted, about 5 minutes

  5. Go to step 8 or continue to step 6 if you want your sandwich to be even more cheesy

  6. Sprinkle half of the shredded cheese on top of the top slice, quickly flip the sandwich over using a spatula and let the bread and cheese brown while the cheese inside melts (about 1-2 minutes)

  7. Lift the bread to check if the bottom is nicely browned, sprinkle the rest of the shredded cheese on the top side and flip the sandwich over again

  8. Cut the sandwich in half and serve immediately
