#10 Spicy kimchi noodles


Kimchi Bibimguksu 김치비빔국수


Kimchi Bimbimguksu is Korea’s favourite summer dish. It is made by mixing cold noodles with kimchi and special bibim sauce, resulting in sweet, spicy and tangy flavours.

비빔[Bibim]: Mix / 국수[Guksu]: Noodles


  • 1/2 cup of finely chopped mature kimchi

  • 1/2 cucumber

  • 1 boiled egg

  • 200-220g Somyeon (Korean thin noodles)

Bibim sauce

  • 2 tbsp Gochujang (chilli pepper paste)

  • 2 tbsp soy sauce

  • 2 tbsp vinegar

  • 2 tbsp sugar

  • 1 tbsp chilli flakes

  • 1 tbsp sesame oil

  • sesame seeds to sprinkle


  1. Mix a chilli sauce with chopped kimchi, slice cucumber thinly and cut a boiled egg in half

  2. Add noodles into a pot of boiling water, keep stirring to prevent them from sticking together and pour in cold water 3-4 times whenever the water is trying to boil over

  3. When the noodles are cooked, rinse them in cold water a couple of times, strain them, and set aside

  4. Add the noodles and chilli sauce with kimchi in a big bowl and mix well together

  5. Put each portion on a serving plate and decorate with cucumber slices and a half of boiled egg on top

  6. Sprinkle a pinch of sesame seed and serve
