#09 Kimchi Marinara Sauce

Kimchi Tomato Sauce 김치토마토소스

MAKES 3 CUPS / PREPARE 10 MINS / COOK 1.5 HOURS

A while ago we tried to make kimchi pizza just by adding kimchi with other toppings, but there wasn’t enough kimchi flavour in the pizza. Recently we found kimchi marinara sauce recipe on Food & Wine blog, made the sauce following their recipe and the result was very satisfying. We slightly modified the original recipe to make the sauce even more smoky, spicy and delicious. This sauce is very versatile; you can use it on pizza, as a pasta sauce or alongside meat or fish!


Ingredients

  • 250g of finely chopped kimchi (use all the kimchi juice)

  • 2 x 400g peeled plum tomato in natural juice

  • 1 tbsp extra-virgin olive oil

  • 1 tbsp unsalted butter

  • 1 tbsp chilli pepper flake (optional)

  • 1 tsp minced garlic

  • 1 tsp sugar

  • 1/2 tsp salt

  • 1-2 basil sprigs or 1-2 tsp dried basil


Method

  1. Heat oil and butter in a medium saucepan and add kimchi, salt, chilli pepper flake and garlic once the butter is melted

  2. Cook over moderate heat, stirring occasionally, until kimchi is fully cooked, about 8 minutes

  3. Scrape the mixture into a blender/food processor and add tomatoes; puree until smooth

  4. Move the kimchi tomato mixture to the saucepan, add sugar and basil and cook over low heat, stirring occasionally, until thickened, about 1 hour

  5. Store the sauce in our small kimchi jars! (don’t forget to sterilise the jars before use)
