Kimchi bokkeumbap 김치볶음밥

Kimchi fried rice is one of the easiest kimchi dishes to make. It is delicious with meaty ingredients such as bacons, hams, chorizos or canned tuna as well as just on its own. This dish is best to be cooked with mature kimchi. If your kimchi is still young and fresh, no worries! you can change your kimchi into aged kimchi by adding vinegar to make it sour.


Ingredients

  • 250g jar of kimchi

  • 2 bowls of rice

  • 60g of your choice of meaty ingredient (optional)

  • 2 stalks of spring onion

  • 1 tbs soy sauce

  • 1 tbs sugar (optional)

  • 2 tbs vegetable oil

  • 1 tbs sesame oil

  • 2 fried eggs


Method

  1. Chop spring onions and cut kimchi into tiny pieces

  2. Lightly cook the spring onions in vegetable oil and add your choice of meat; stir fry until it is half cooked

  3. Add the kimchi and cook for 2 mins, then add soy sauce with little sugar and cook until all liquid is gone

  4. Add rice and cook for 5 mins. Remove the heat and finish with sesame oil

  5. Serve with fried egg on the top
